Strawberry Cheesecake Jars

Strawberries have always been a clear favourite in our house, whether they are served with cream, dipped in sugar, or simply just as they are, the boys can’t resist them.
With Wimbledon starting next week and strawberries being sold left, right and center, I felt it would be appropriate to post a strawberry themed recipe.
Strawberry Cheesecake Jam Jars
For this you will need 6 old (clean) jam jars – with lids
200g buttery biscuits
200g cream cheese
200ml double cream
6 tbsp icing sugar
2 tsp vanilla extract
500g strawberries – halved or quartered
First blitz the biscuits into crumbs. You can either do this in a food processor or pop them in a freezer bag and give them a good bash with a rolling pin. Then divide the crumbs between the jars.
In a bowl, whisk the cream, cream cheese, 5 tbsp of icing sugar and the vanilla extract until softly whipped.
Tip half the strawberries and remaining icing sugar into separate bowl and crush with a fork to a purée. Ripple the purée through the cream mixture and divide between the jars.
Top each of the cheesecakes with the remaining strawberries. Secure the lids on the jars and chill until ready to serve.
