SEASONAL RECIPES : Fruity Mint Granita

Summer has arrived and this hot weather calls for a cleansing, cooling treat.
I recently discovered this fab recipe for the perfect summer “coolant”
- 1/2 cup of fresh mint leaves
- 480ml of water
- 63g of wild flower honey (locally sourced runny honey)
- The juice of 1-2 limes, divided use
- 1 small watermelon (seedless if preferred)
- 1 pint of fresh raspberries (washed)
First, in a blender combine the water, mint leaves, honey and the juice of half a lime. Blitz this on a high speed until combined – you will still be able to see small bits of mint.
Skim any foam off the top and pour the mixture into a freeze safe container.
Remove the container from the freezer about an hour later and stir to break up the ice crystals. Return to the freezer and repeat every 30 minutes to an hour, until the mixture has turned icy flakes and is easy to scoop.
To serve, squeeze the juice of a lime and scatter the zest over chunks of watermelon and fresh raspberries divided into individual dishes. Then add a scoop or two of your mint granita to the fresh fruit and garnish with extra mint leaves. Serve before the heat gets the better of the granita!
